Conserve and preserve at the Mauritian Wildlife Foundation
It might sound like something the beach-bum party animal in you wants nothing to do with, but you'll be providing a valuable service to an excellent cause and you'll get to head back to your hostel at the end of the day having earned your backpacker gold stars. Pride and glory shall be yours!
Volunteers are accepted by the MWF all year round and they have stations on both Rodrigues and Round Islands so you'll see more of the country than you might otherwise have done. A win-win situation, I call that. Even better, by donating your time you get to play with Pink Pigeons - which, judging by the name, are just so much better than your average rat with wings. I'd do it just for that.
There's no shortage of places to stay on the delicious island of Mauritius, but one of the best backpacker hostels I've come across on my travels has to be the Cloudbreak. Pretty cheap and comes with air conditioning, a personal BBQ area and includes bed sheets in the price. Absolutely perfect!
